Can a dramatic change in temperature affect the accuracy of an O2 sensor?

All electrochemical sensors are affected by temperature. This applies equally to O2 and NO sensors. For a measurement to remain accurate, the temperature must stay constant during the experiment or must be compensated for either in software or within the meter.

Some of our oxygen meters do not have compensation built in and so must be used at constant temperature. Some meters can compensate and come supplied with a temperature probe.

View the specifications page for the meter you're interested in for details.
